La Frittata di Semolina

The days are Covid-19 days. The fridge is filled with leftovers. We count on the fridge to be strong and carry the weight. A soldier in this war of isolation, quarantine, staying home/safe or however we'll have to keep calling it. "Our job is buying, your job is to keep food", we tell it. As much as possible. and make room for more.
Desperate times call for desperate measures. and creativity. and lots of food. lots of it.
Any piece of food, any leftover is crying for a recipe. Who is the crazy person that will throw something? end of something?
Not me!
& this is the story of this Frittata.
An end of Semolina bag.
Bonus points for simplicity.

Ingredients:
2 eggs
1/2 cup Water
1/2 cup Milk
1 cup Semolina
100 g Pizza Chesse
100 g Bulgarian Cheese/Israeli Feta
1/2 teespcoon Baking Soda
Salt & Pepper
1 tablespoon Olive Oil
Steps:
a) On a big bowl, mix the eggs, milk and water
b) Add semolina, 2 kinds of cheese, baking soda, salt & pepper
c) Warm a big pan with the olive oil
d) Pour the bowl to the pan and spread equally as an omelet
e) Cover the pan and fry for 7 min , and then gently turn to the other side for another 5 min
*Can be done with a plate or any supporting tool you may have
f) Remove from the stove and cut to slices
